Weekend Fun!


Celebrating the hubby's birthday yesterday with a BBQ. We had great food & great people, can't get better than that!
Thanks to the hubby's parents for grilling up tons of burgers & dogs for us.

Not much in the way of recipes for dinner yesterday, just a burger, fruit, deviled eggs & grilled corn for me. Hubby's dinner wouldn't have been on his plate long enough for me to snatch a picture! We also had beef dogs & grilled potatoes. If we can eat it, we can grill it! Mmmm... but what was for dessert?!

Hubby requested a cheesecake for dessert & it turned out quite well. The best go-round I've had using this recipe as only a guideline, looks like it may be time to actually write this one down...

Pretty sure the birthday boy ate all he could & had a great time! Happy Birthday Hubby!


Also finishing up the last in a batch of headbands for Firefly Yoga's Grand Opening tomorrow! What's for dinner?

What's for dinner is a little late this evening thanks to an impromptu yoga session with my dear friend Nickki! She's opening a new yoga studio in just a few days! Be sure to check out the new place at Firefly Yoga Studio.

Now, what is for dinner? Chicken!
Fajita-lime Chicken with Quinoa
Serves 2 (or 1 really hungry hubby)
This might look a little like dinner from yesterday, but the taste is totally different. Ask my hubby!

2 pieces chicken breast
1 bell pepper (green, yellow, red, whatever you want), sliced
1/2 medium yellow onion, sliced
1/2 cup quinoa
1/4 t. paprika
1/2 t. onion powder
1/2 t. garlic powder
1/2 t. cilantro
1/4 - 1/2 t. ground red pepper (to taste)
1/4 t. salt
1/2 lime

Cook quinoa according to the directions (I use my rice cooker). Meanwhile, heat 1 t. EVOO in a saute pan or cast iron skillet over medium heat. Cook chicken until browned, about 2-3 minutes. Mix all of the spices together & sprinkle about half over the chicken. Remove chicken from pan & add onions and peppers, cooking until tender, about 3-4 minutes. Sprinkle the rest of the spices over veggies. Add chicken back to pan & cook until just done, about 2-3 minutes more. Squeeze lime juice over chicken & veggies & serve over quinoa. Stir in some cilantro to the quinoa for a little extra fun.

What's for dinner?

A quick dinner after a long day - S&P Chicken & Beans with Garlic Yogurt Pasta

2 pieces chicken breast
2 cups frozen green beans
2 cups whole wheat fusilli (or other short pasta like penne)
2/3 cup plain yogurt
1 teaspoon minced garlic
1/2 teaspoon thyme

Heat 1 teaspoon EVOO in pan over medium heat. Saute chicken until browned, add green beans & season with salt & pepper. Cover chicken & beans & reduce heat to low.

Meanwhile, cook pasta according to directions. Drain the pasta, reserving about 1/3 cup of the water. Add pasta back to pot & stir in yogurt, garlic & thyme. Season to taste with salt & pepper. Add as much of the reserved pasta water to cover the pasta with the yogurt sauce.
